Blueberry Banana Nut Bread

There’s nothing quite like the comforting aroma of freshly baked banana bread packed with wholesome ingredients and kissed with bursts of juicy blueberries. This Vegan Blueberry Banana Nut Bread is moist, subtly sweet, and perfectly nutty thanks to crunchy pecans and a hint of melted vegan butter. It’s easy to make with simple pantry staples like vegan pancake mix and applesauce, and it bakes up golden and fragrant in under an hour. Enjoy a slice warm from the oven with your morning coffee—or as a cozy afternoon treat you’ll want to make again and again.
Ingredients:
2 cups vegan pancake mix
1/2 cup sugar
1/2 cup chopped pecans
3/4 tsp baking powder
1/4 cup unsweetened applesauce*
1/4 cup fresh blueberries, rinsed**
1 cup ripe mashed bananas (about 2 medium-sized, ripe with brown-flecked peel)
2 Tbsp almond or soy milk
1/4 cup melted vegan butter

Instructions:
Preheat oven to 350°F, and grease a loaf pan.
Using a whisk, mix pancake mix, sugar, baking powder and pecans in a bowl. Set aside.
Combine applesauce, blueberries, bananas, almond (or soy) milk, and melted vegan butter in another bowl. Mix with a spoon, and add to dry ingredients.
Stir just enough to moisten and mix in with all the dry ingredients.
Turn the mixture into the greased loaf pan and spread evenly.
Bake at 350°F about 40-45 minutes. Press the tip of a butter knife into the center of the loaf to determine if done. Knife should come out clean.
Cool 10 minutes in the pan on a wire rack; then loosen the edges of the loaf from the pan using a butter knife.
Flip the loaf pan upside down to remove the loaf, and cool completely before cutting. Use a sharp knife to cut large slices.

Notes:
*If using sweetened applesauce, you may want to reduce the sugar by 1/8 cup.
**If canned blueberries are used, be sure to rinse and drain them.
