Spicy Farro Taco Bowl


As someone who really likes the comfort of hot lunches, Nourish Bowls are one of my favorite midday treats.


Get ready to tantalize your taste buds with this Spicy Bowl of deliciousness! Packed with fiber-rich ancient farro and onions, protein-rich black beans, and savory vegan meat crumbles prepared with fiery taco seasoning, this bowl brings a punch of flavors that will surely satisfy your cravings. Topped off with juicy tomatoes, fresh avocado slices, and zesty salsa, this vegan-friendly bowl is a perfect balance of textures, taste and nutrition, making it a delectable and wholesome meal for any occasion.


Ingredients:

- 1 cup farro grains, cooked, drained and rinsed

- 1 cup black beans, drained and rinsed

- 3/4 cup vegetable stock or broth

- 1 cup vegan meat crumbles

- 1/2 large white onion, diced

- 1 packet taco seasoning (I use Old El Paso Hot & Spicy brand)

- 2 or 3 Roma tomatoes, diced for topping

- 2 ripe avocados, cut into slices for topping

- salsa for topping

- seasoning salt

- crushed tortilla chips for topping (optional)


Instructions:

  1. In a large skillet, add black beans, meat crumbles, onion and taco seasoning. Add the vegetable stock, mix ingredients well and bring to a low simmer.

  2. Stir ingredients periodically to coat and cook well with the seasoning.

  3. Cook over a low heat until veggie stock has reduced and mixture is wet, but no longer "soupy."

  4. Sprinkle the cooked farro with seasoning salt and toss. Spoon a serving of farro into each bowl.

  5. Spoon the cooked beans, onions and crumbles over the farro in each bowl.

  6. Lay the avocado slices and tomatoes on top and add a large dollop of salsa to each bowl.

  7. Top each bowl with a handful of crushed tortilla chips if desired. Enjoy!
